The Recipe: Southwestern Pasta Salad

The “new” Ottawa County Connections just seemed incomplete without a recipe. Here is a spicy rendition of the backyard BBQ mainstay for your weekend events:

Southwestern Pasta Salad:pasta nutrition

8 ounces rotini pasta, cooked
6 ounces non fat plain greek yogurt
2 tablespoons chili powder (or to taste)
2 teaspoons ground cumin (or to taste)
1/2 teaspoon salt
2 cloves garlic, crushed chopped finely
1 cup whole kernel corn, drained and rinsed
1 cup black beans, drained and rinsed
1/2 cup diced green pepper
1/2 cup diced orange pepper
1 cup chopped tomato
1/2 cup fresh cilantro

Combine all the ingredients. Stir. Chill. Enjoy.

Tips and Additions:
Add fresh, chopped avocado.  But beware it doesn’t keep well so eat up!
Use taco or fajita seasoning mix in place of the salt and spices.
Add a 1/2 cup sliced black olives.
Use whole wheat noodles for added fiber.
Substitute 1/2 cup of olive oil and 1/4 lime juice if you do not eat dairy.  It does add a few calories, however.
Help control your portions by serving this on a bed of greens, such as vitamin rich spinach.
Make it lunch by adding a cup of diced rotisserie chicken.
